Fresh wasabi root is considered one of the most expensive crops due to its long harvest period (2 years from planting to harvesting). With its pungent taste profile, it differs greatly from standard store bought wasabi. Fresh root wasabi pairs well with sashimi on top of rice bowls or even with Japanese Wagyu steak.
If stored properly the wasabi is able to be kept in the refrigerator for up to 2 weeks. The wasabi root should be wrapped in a moist paper cloth (provided) and wrapped in a plastic covering and every 2 days be rehydrated by submerging the root and cloth in cold drinking water.
