Caught in pots on the coasts of New Brunswick and Nova Scotia, our Canadian lobsters are collected by our partner on site. Rested in a tank in order to limit their stress, they are carefully conditioned. Only the fullest and most lively lobsters are then shipped out. The lobster fully deshelled and cleaned in vacuum sealed packages that is compatible to be used with a sous vide device.
